The Woodstock Fruit Festival is a celebration of health, fruit-based diet, and personal growth, and is the world’s largest, all-inclusive, raw vegan health retreat. Part of the fun is trying new fruits that are not available in most grocery stores, such as mamey sapote, exotic dates, durian, jackfruit, and fresh figs. Many of the festival participants eat an abundance of fruit the rest of the year, but aren’t able to find high quality fruits locally.

For the 2022 festival, I introduced a gourmet raw vegan menu to accompany the wonderful unlimited salad and fruit bar. The goal of this menu is to provide familiar flavors in a simply, healthy way. Many people who adopt a raw vegan diet forego traditional dishes such as lasagna, hummus, and tacos because they are focused on proper food combining and a low fat, nut-free, oil-free, and salt-free diet. Using highly digestible sprouted seeds, herbs, and intrinsic salts found naturally in vegetables, I designed a set of 7 entrees that emphasize optimal nutrition, beneficial prebiotics, and bold flavors.

In this recipe book, you will find the exact ingredients and methods for recreating the dishes that were served at the 2022 Woodstock Fruit Festival. Each dish was initially intended for 400 people, but the servings in this book allow at-home preparation for a small group of 2-8 people. The ingredients are readily available at any local organic market, and no dehydrator is needed. Although a food processor or blender is necessary to make some of the dishes, others such as the Coconut Curry and Coconut Ceviche don’t require any special equipment.

The intention of this book is to allow festival participants, and anyone else who seeks better health through a clean and simple lifestyle, to continue eating the rest of the year in the most uplifting way possible. Sharing these meals with friends and preparing meals ahead of time for a busy week will help maintain the energy and positivity that the Woodstock Fruit Festival exemplifies.

I hope that you enjoy these recipes, and improve upon them in your own personal way. There is no salt in any of the dishes, but feel free to add some if it makes the food more interesting to you. The goal is to make the raw vegan lifestyle fun and sustainable, and making progress towards your health goals is always more important than pursuing perfection.
